Need-to-know information before you board your flight.
Argentina operates with a unique dual-currency exchange system. The "Official Rate" is the government-mandated exchange rate, but the "Blue Dollar" (Dólar Blue) is the parallel, informal exchange rate that often yields significantly more Argentine Pesos per US Dollar.
Pro-Tip: Bring crisp, flawless $100 USD bills to exchange locally at cuevas (exchange houses) for the best cash rates, or wire yourself money via Western Union. Recently, foreign Visa and Mastercards have also been permitted to use the "MEP Rate" (tourist rate) which is very close to the Blue Dollar, making credit card usage much more viable for tourists than in years past.
Argentines live on a shifted clock compared to much of the world. Do not expect to eat dinner at 6:30 PM. Most quality restaurants won't even open their doors until 8:00 PM, and locals typically sit down to dine between 9:30 PM and 10:30 PM. To bridge the gap, partake in Merienda—a late afternoon coffee and pastry break usually taken around 5:00 PM. Nightlife (boliches) doesn't kick into full gear until 2:00 AM.
Meat is almost a religion in Argentina. The Asado is not just a meal, it is a hours-long social ritual. Beef is slow-cooked over wood and hot coals, never gas. When ordering at a Parrilla (steakhouse), must-try cuts include Ojo de Bife (ribeye), Bife de Chorizo (sirloin), and Entraña (skirt steak). Always start with grilled provoleta cheese and a chorizo sausage, and pair it all with an oaky Mendoza Malbec.
